Mid-July Harvest

Yup, turns out it's more difficult than I thought to stay on top of blog entries. It's tough to balance family, weeding, and work! But boy have we been enjoying the sunshine and bountiful harvest. We hope you are too! 

Today's share contains squash, eggplant, cucumber, kale, and swiss chard. 

We eat a ton of squash (cut into spears) and eggplant (thickly cut rounds) cooked on the grill. Last night I made a casserole of thinly sliced squash, onion, peppers, vegan mayo, cheddar cheese, salt and pepper, covered with butter coated panko. Makes a great dish for a potluck and uses up a bunch of squash or zucchini. 

Thank you to all who have been sharing your meal creations using our produce. We have really enjoyed the photos on Facebook and I'm sure they give everyone some food inspiration!
