Hope everyone found my car okay! This week your share contains Chinese cabbage (a variety called "Fun Jen"), green onions (scallions), and rhubarb. We tried the cabbage the other night by chopping and frying in a pan with bacon grease...mmmm. Bet it would be delicious in a soup as well. Enjoy and hope everyone has a great Memorial Day Weekend. I made the cabbage soup and it was fantastic. It came out a bit spicy so I also added sugar and that did the trick. I substituted rice noodles for the egg noodles and it worked great.

I made a cabbage slaw and it was delicious! I used the chinese cabbage, green onions, shredded carrots, kale, toasted sliced almonds, red wine vinegar, sesame oil, olive oil, salt, pepper, and some sugar to taste.
